Ingredients:

• 1 pound of Ground Beef
• 3 cups of frozen potatoes O'Brien
• 16 oz of thick and chunky salsa
• 1 cup of frozen corn
• 1 cup of shredded cheddar cheese
• 1/4 cup of cilantro
Instructions:

Heat large nonstick skillet over medium heat until hot. Add potatoes and cook until lightly browned, stirring occasionally. Remove from heat and keep warm. Brown ground beef in the same skillet breaking ground beef into 3/4-inch crumbles and stirring occasionally. Pour off drippings, as necessary. Season beef with salt and pepper as desired. Pour in salsa, corn and cilantro. Cook until heated through. Stir in potatoes and the shredded cheese, cook until heated through and the cheese is melted.
Cook's Tip:
- Cooking times are for fresh or thoroughly thawed ground beef. Ground beef should be cooked to an internal temperature of 160ºF.
You can substitute a Mexican cheese blend for the Cheddar cheese if you would prefer. Serve with sour cream, fresh cilantro and lime wedges as garnish.
